abundance soup-a great recipe for an overflow of vegetables August 4, 2006

Abundance Soup

3-4 lbs zucchini, cut in 1/2 inch pieces
1 lb Italian sausage, (we use hot) removed from casings
2 cups celery cut into 1/2 inch pieces
2 cups onions, diced
2 quarts fresh tomatoes
2 tsp salt (whatever!)
2 tsp chili powder
2 tsp sugar
oregano to taste
basil to taste
fresh diced garlic to taste
2 quarts boiling water

1. Brown sausage in large soup kettle
2. Add celery and onion
3. Cook 10 minutes
4. Add remaining ingredients, bring to a boil, and then let simmer 45 minutes.

Serve with scoops of rice on top of each bowl.
Quick to make and great with crusty bread.

Was going to post the minnestrone I made last night, but then I remembered this recipe. I copied it from Herb Quarterly Magazine, 25 years ago, when I first started growing my own herbs. It is a favorite of my daughter, Mindy, and the only recipe she took with her, when she left home.
