My husband and I love any form southwestern type food, so I am always on the search for good recipes. Look here for one we tried and liked. I did change a few things- did not add meat, and increased the onions and cheese to an 8 ounce package of the mexican mixture. I like to sauté the onions in a little olive oil before I add them to the eggs.
Also, for health reasons, I used egg beaters, and that worked fine.
We had ours with a green salad, but would go nicely with fresh tomatoes and cucumbers.
