Pozole
Here is a quick and easy recipe for pozole, taken from several different sources.
This time, I added the red pepper to the soup while cooking and I got it too darn hot! I had to serve it over rice to coo it off. It would be better to add the crushed red pepper at the table.
1 pound lean pork or chicken, diced
1 large onion, diced
2 cloves garlic, diced
I can diced green chilies
1 can yellow or white hominy
red crushed pepper to taste
oregano, cumin and black pepper to taste
4 cups water
1. Brown the pork or chicken in olive oil, add the onion and garlic.
2. Add the chilies and hominy.
3. Add the water, season gently, and simmer for 30 minutes.
Great with a green salad and warm tortillas.
