Lemon Bread
1/2 cup softened butter
3/4 cup sugar
rind of 1 lemon, grated
2 eggs
1 1/2 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
juice of 1 lemon
1/4 to 1/2 cup sugar
Preheat oven to 350ยบ. Cream butter and 3/4 cup sugar. Add lemon rind and eggs, beat well. Sift together flour, baking powder, and salt. Add to butter mixture along with the milk and stir until dry ingredients are moistened. Bake in greased 9 inch loaf pan 50 to 60 minutes. When done, remove from oven, and top with a mixture of the juice of one lemon and the remaining sugar. Let set in pan to cool.
Good served with cream cheese.

Sandy! My husband is a Fruity Kind of Guy - he loves fruit snacks, cakes and pies. He will absolutely love this. I like fruit pastries, too, but he is definitely a candidate for this lemon treat. Thank you! Our 32nd anniversary is coming up. I’ll surprise him.
